If you are new to the Indian cuisine and wondering what is vada? Vada is a popular South Indian fritter usually made with lentils. Thanks to the leftover bread here! It helps us make these vadas without having to soak and grind the lentils to make the batter. These bread vada are the instant kind and are similar to Maddur vada and Rava Vada. But here we use bread as the main ingredient. So next time you have some left over slices of bread, try out this recipe. You can also make the dough ahead and use it when you are ready to serve. Here I have not used potatoes and went ahead with carrots and onions. On occasions I add a small boiled potato, spinach or some coarsely crushed sweet corn to make the dough. I have used multigrain bread, in fact you can use any that you have including white bread. Rice flour goes well in this recipe as it adds some crispness to the bread vada. How to Make Bread Vada (Stepwise photos)

Preparation

  1. I have used 3 multigrain bread slices. You may use white bread as well.
  2. Tear them to bite sized pieces.
  3. Add ginger garlic paste, carrots, onions, chilies, pudina, green chilies and coriander leaves.
  4. Next add in cumin and salt.
  5. Add some chopped red chilies (or red chilli flakes). Sprinkle some garam masala as well.
  6. Mix up everything and sprinkle little water.
  7. Mix up and make a dough.
  8. I used some rice flour to make them crispy.
  9. Mix and make a stiff dough.
  10. Divide the dough to 8 portions and make round balls. Then flatten them. Do not make them too thick. They must be thin.
  11. Make them uniform and keep them in a plate.

Fry Bread Vada

  1. Heat oil in a pan. When it is hot enough fry the bread vada.
  2. Flip them and fry until golden and crisp on both sides.
  3. When golden and crisp remove them.
  4. Transfer to a kitchen tissue. Serve bread vada as a evening snack with chutney, sauce or tea. Related Recipes
